The smoke from the mountains

SAINT-ALEXIS-DES-MONTS. The Alexis-des-Monts company Les Fumés des Monts, known for its smoked trout products, is celebrating its thirtieth anniversary this year.

“We aim for quality and a close connection to the raw materials,” notes Pascal Olivier, owner of Fumés des Monts for the past ten years, regarding his company's distinctive approach. The fish supply, totaling between 75 and 100 tonnes annually, comes from both Pisciculture St-Alexis-des-Monts and a few producers elsewhere in Quebec and Canada.
